Fig toast.

Brown Turkey figs come in for two short windows in NC: late June, then again in late August. This is the snack you make on day one of either.

Why this works.

Three flavors — sweet honey, salty cheese, jammy fig — plus crunch from toast. It works because fresh figs are basically already a dessert.

If you have ricotta, use it. If you don't, butter is fine. The fig is the star.

Steps.

  1. Toast the bread until it's golden but still soft inside.
  2. Spread the ricotta thick across the warm toast.
  3. Lay the fig slices on top in one layer. Overlap slightly.
  4. Drizzle honey across the top — about a teaspoon.
  5. Finish with flaky salt and a crack of pepper.
  6. Eat with your hands. There is no other way.

Vihaan's tips

  • Goat cheese instead of ricotta is incredible.
  • Pop it under the broiler 1–2 min for a hot version.
  • Balsamic glaze instead of honey if you have it.
