Butter radishes.

The French have been eating this for hundreds of years. It's three ingredients. It changed how I think about radishes.

Why this works.

Cold radish + cold butter + crunchy salt = the most refreshing snack on a hot spring afternoon. The fat tames the radish bite.

Use real butter and good salt. That's the whole trick.

Steps.

  1. Spread cold butter thick on the bread — like, more than you think.
  2. Slice the radishes as thin as you can. A mandoline works, but a sharp knife is fine.
  3. Lay the radish slices on the butter, overlapping a little.
  4. Sprinkle flaky salt across the top. Generous.
  5. Eat immediately while everything is cold and crunchy.

Vihaan's tips

  • If your radishes are spicy, soak the slices in ice water for 5 min.
  • Try with watermelon radishes for color.
  • Add chives or dill on top if you have them.
