What you need to know.
Cucumbers are a true summer vegetable — they need real heat to perform well and sulk in cool soil. I grow Marketmore for slicing and sometimes Spacemaster in containers on the porch. Once the weather is right and they get established, cucumbers are incredibly productive: one well-tended plant can give you cucumbers every few days for months.
The best decision I made for cucumbers was building a trellis. Cucumbers grown vertically take up half the ground space, fruit hangs clean and straight, air circulates better so disease pressure drops, and it is much easier to spot fruit before it gets too big. A simple wire mesh panel between two wooden stakes works perfectly — cucumbers send out little tendrils that grab on to almost anything.

Step by step.
Direct sow seeds or transplant seedlings after the last frost when soil is consistently above 65 degrees — in Zone 7b, that is late April to early May. Plant 12 inches apart along the trellis, 1 inch deep. Cold soil causes cucumbers to stall and sometimes rot.
Cucumbers have separate male and female flowers on the same plant. Male flowers open first and have a straight stem. Female flowers have a tiny cucumber at the base. If female flowers drop without setting fruit, bees are not reaching them. I hand-pollinate by touching the center of a male flower with a small paintbrush and then touching female flower centers.
Harvest cucumbers at 6 to 8 inches long while still deep green. Check every 2 to 3 days — left on the vine too long they turn yellow, seeds get big and hard, and the skin becomes bitter. Pick aggressively even if you have more cucumbers than you need.
When to plant in Zone 7b.
Plant in Zone 7b after April 15th, once nights stay reliably above 55 degrees. From flower to harvest is typically 10 to 14 days. I plant a second succession in late June for a fall harvest in September and October.
Cucumbers slow down in peak August heat and more fruit tends toward bitterness then. The fall planting, going in around July, picks back up strongly in September. I have had some of my best cucumbers in October from a late planting.
Problems I ran into.
Cucumber beetles — yellow-green insects with black spots or stripes — are a real problem in NC. They damage leaves and flowers and also spread bacterial wilt, which can kill plants quickly. I use row covers early in the season and remove them once flowers open so bees can get in for pollination.
Powdery mildew hits cucumber leaves in late summer — white powdery patches that spread across leaves. It does not kill plants immediately but slows them down. Good air circulation from trellising helps a lot. Avoid watering the leaves — always water at soil level.
What I make with it.
Fresh garden cucumbers are completely different from grocery store ones — thinner skin, no waxy coating, much better flavor. I slice them thin with a little salt and rice vinegar. It sounds simple because it is, and it is the best way to eat them.
