What you need to know.
Carrots were the vegetable I struggled with the hardest before I figured out the problem. My first planting went into regular garden soil and came out 2 inches long, forked into weird twists, and stopped growing. The reason: NC piedmont clay. Carrots need loose, deep, stone-free soil to grow straight and long, and heavy clay does the exact opposite.
The solution that finally worked for me is a raised bed filled with a 50-50 mix of garden soil and compost, at least 12 inches deep. I now grow Danvers Half Long, which was specifically bred for heavier soils and grows shorter and stockier than a standard carrot — it handles imperfect conditions much better than slim types like Nantes. Chantenay is another good choice for anyone dealing with dense soil.

Step by step.
Sow seeds a quarter inch deep directly into loose, well-amended soil. Carrot seeds are tiny — I mix them with dry sand before sowing to help spread them more thinly. Sow in rows about 6 inches apart.
Thin to 2 to 3 inches apart once seedlings are 2 inches tall. This is the step I always wanted to skip and always regretted skipping. Crowded carrots do not develop into real carrots. Be ruthless about thinning — use scissors at soil level so you do not disturb roots of neighboring seedlings.
Keep soil consistently moist while seeds are germinating — carrot seeds can take 2 to 3 weeks to sprout and dry soil kills them before they have a chance. I lay a piece of burlap or cardboard over the row until I see green emerging, which prevents the soil surface from crusting.
When to plant in Zone 7b.
In Zone 7b, sow carrots from mid-February through early March for a spring harvest in May and June. Sow again in September and October for a fall and early winter harvest. Fall carrots are my favorites — frost sweetens them as the plant converts starches to sugar.
Carrots can stay in the ground after they are mature — in fact, leaving them in cool soil for extra weeks improves flavor. Pull them before a hard freeze or they go limp. I leave fall carrots in the ground well into December here in Apex and they come out sweet every time.
Problems I ran into.
Forking and strange shapes happen when roots hit an obstacle in the soil — a rock, a dense clay lump, a dry patch — and split to grow around it. The fix is thorough soil preparation before planting, not treatment after. I loosen the bed deeply and add compost every single time.
Carrot rust fly larvae tunnel through roots leaving brown trails inside. I use floating row covers over spring plantings as a precaution — the adults lay eggs in the soil right next to carrot plants and the covers break that cycle before it starts.
What I make with it.
Homegrown carrots taste sweeter and more intensely carroty than anything from a grocery bag — especially fall ones after a frost. I eat them raw from the garden more than I cook them. Roasted with olive oil, salt, and a little honey they are incredible.
